Pound cake! Yes, it is fantastic for dessert or with a cup of tea or coffee for breakfast. I eat a lot of desserts for breakfast. What is the difference between eating a slice of this cake or eating a donut? Actually, there is a difference this cake has mashed bananas in it. Breakfast approved!

If you like pound cake and banana bread you will love this marriage of Banana Pound Cake. In my house I am the only one who likes banana baked goods. Seriously, I don't know what is wrong with the rest of the family! Anyway, as much as I would love to live off of banana pound cake for a few days my will power comes in and reminds me that other vital food groups must be consumed for a healthy balance. I slice the cake in what would be three piece sized chunks, wrap the individual chunks in plastic wrap, place them in a freezer bag and freeze them for another time.

Ingredients

3 cups sugar
1 cup butter
6 eggs
2 medium sized ripe bananas mashed
1 1/2 tsp vanilla extract
3 cups flour
1/4 tsp baking powder
1 cup sour cream
1/4 cup powdered sugar

Directions

Preheat oven to 325F.
Grease bundt pan with shortening then sprinkle bundt pan with sugar.
Beat the sugar and butter until well combined.
Beat in eggs one at a time.
Mix in vanilla extract.
Mix in mashed bananas.
In a medium mixing bowl combine flour and baking powder.
Add a cup of the flour mixture alternating with the sour cream into the mixture.
Once well combined pour into bundt.
Bake at 325F. for 75 minutes.
Let cool before dusting with powdered sugar.
