Avocado Cilantro Dip

Avocado Cilantro Dip Recipe

A creamy dip served cold with an assortment of dippers. The dip has smooth avocado flavor with a punch of cilantro and undertones of onion. Perfect for a light snack or appetizer.

You take a little bit of this and a little bit of that and mix it together then find something crunchy to dip with. I think that is what makes dips so much fun to make and eat. It is a an opportunity to test flavors and different textures to create something awesome.

One of my favorite ways to create a new recipe is to:
1. Have a dish in mind. In this case it was a dip.
2. Open up the fridge and pull out ingredients that will work well together.
3. Spread out the ingredients on the counter.
4. Start taste testing ingredients together.
5. Grab a mixing bowl and this is where "a little bit of this and that comes in".

It is also a great opportunity to clean out your fridge. 

This is where you can get creative and make something amazing. Honestly, I've had a few flops, not all can be winners. But you learn from those mistakes. Example: earlier this year I learned bacon and peanut butter don't broil well together. It sounded awesome in my head.

Anyway, back to this Avocado Cilantro Dip. It turned out so good. I know you will love it. My favorite thing to dip in this is Doritos. What will you use as a dipper?   

Avocado Cilantro Dip

Ingredients
2 oz. cream cheese (softened)
1/2 cup sour cream
1 avocado, peeled, seed removed and diced.
1 Tbs. cilantro paste (found in the produce section of your store by the herbs and is in a tube)
1 Tbs. lemon juice
1/2 tsp. salt
1/4 tsp ground white pepper
1/4 tsp ground cumin
3 scallions, thinly sliced

Directions
Cream together the cream cheese, sour cream, and avocado.
Mix in the remainder of the ingredients and mix until well combined.
Serve cold with an assortment of dippers.
